Does OJ degrade whey?

So, I long ago adopted half strength OJ as a hydration drink. I'm used to it. I like it. I don't feel right if I don't drink it. This long antedated my return to running some 18 mo. (after 30 years off...)

For some of my workouts, I add the requisite amount of Hammer whey to 500 ml. of this drink and shake it up fairly well: A few clumps of whey remain, but it largely dissolves. I think.

However, I wind up with a really large layer of persistent foam which is as large as the liquid layer underneath it. This has made me wonder whether the acid in the OJ, or some other component, denatures or otherwise degrades the whey.

Anyone have any data on this issue?

Hello SzDoc -

As you know, neutral pH is 7.0. Typically, orange juice's pH runs anywhere from 3.30 - 4.20 so it is quite acidic. That said, I know of no research that would suggest that the acidic pH of orange juice would negatively affect the integrity of any of the individual amino acids or the bioavailability of the protein itself.

I'll keep looking around and if I find anything I will post it here.
